Teresa's Breakfast Potatoes Recipe

Ingredients:
1/2 cup butter
1/4 cup minced garlic
1 green bell pepper, chopped
1 red bell pepper chopped
1 white or red onion, chopped
5 large potatoes, peeled and diced small (about 1/2" inch chunks)

Directions:
Melt butter in cast iron skillet. Add garlic, bell peppers, and onion, and saute' about five minutes. Add potatoes, and cook for about 30 minutes, stirring occasionally to prevent sticking (add more butter if necessary), or until potatoes are tender.
