JOHNNY CAKES Recipe

Ingredients:
2 1/2 CUP CORN MEAL
2 TBS FLOUR
1 tsp. SALT
1 tsp. BAKING POWDER
1 EGG, BEATEN
1 tsp. BAKING SODA
1 1/2 TO 2 CUPS BUTTERMILK
BACON DRIPPINGS OR BUTTER FOR FRYING

Directions:
MIX B. SODA WITH BUTTERMILK AND LET STAND 5 MINUTES. MIX CORN MEAL, FLOUR, SALT AND B. POWDER IN MIXING BOWL. ADD EGG AND BUTTERMILK AND MIX WELL. BATTER SHOULD BE THIN. COOK LIKE PANCAKES ON HOT WELL GREASED GRIDDLE.
