Ingredients:
1 lb. boneless beef sirloin steak (or tenderloin, 3/4" thick2 TBS veg. oil 1 med. onion, chopped 1 can (10-3/4 oz.) condensed cream of mushroom soup 1/2 tsp paprika 1/2 cup of sour cream 4 cups of hot cooked medium noodles or rice Chopped fresh parsley for garnish
Directions:
Slice beef into very thin stripsIn skillet, over med. heat, heat HALF the oil. Cook beef in 2 batches until browned, stirring often. Set aside. Add remaining oil. Add onion & cook over medium heat until tender. Pour off fat. Add soup and paprika. Heat to a boil. Stir in sour cream. Return beef to pan. Heat through. Serve over noodles or rice with parsley on top. Makes 4 servings.
I usually add a 4 oz. can of mushrooms if I'm in a hurry and 4 oz. of fresh sliced mushrooms if I have the time to cut them. I add them when I sautee the butter, along with two TBS of butter. This is a favorite recipe of mine. I always get raves if the people like mushrooms.
