Gazpacho Recipe

  Spanish Soup

Ingredients:
2 cucumbers
1 lb. tomatoes
1 onion
2 cloves garlic
10 oz. chicken bouillon
3 tbsp. olive oil
1 green pepper
1 red pepper
1 tsp. vinegar
1 sm. handful chervil or parsley
Salt and pepper

Directions:
Peel one cucumber. Wash and dry the tomatoes. Peel the onion and garlic. Put these ingredients through a blender to obtain a liquid puree. Peel the second cucumber. Dice the cucumber and peppers finely. Add to the puree. Add the bouillon and salt and pepper to taste. Chill. Serve cold garnished with parsley or chervil.
