Peach Raspberry Trifle Recipe

  American Dessert

Ingredients:
1/3 cup white sugar
12 oz mascarpone cheese
2-1/2 cups peaches (about 4) peeled, coarsley chopped
Lady fingers
1 1/2 cups frozen raspberries in syrup
4 large eggs, separated
Pinch salt
1/2 tsp. almond extract
Pinch cream of tartar

Directions:
In electric mixer, whisk yolks, sugar & salt on high speed for 3 minutes until thick. Add mascarpone & almond extract and mix on medium speed until smooth and thick. Fold in peaches. With clean dry bowl & attachments, whip until soft peaks form. Fold into peach mixtre. To assemble: In bowl or parfait glasses, layer lady fingers, raspberry puree, and peach mixture, repeating until bowl or glasses are full, finishing with peach mixture. Chill overnight and garnish with fresh fruit.
