Taramosalata Recipe

  Greek Seafood

Ingredients:
White bread: 2 slices, crusts removed
4 oz. tarama or red caviar
1/3 cup lemon juice
1/4 cup chopped scallions (optional)
1 cup olive oil
Salt and pepper
Chopped parsley or cilantro

Directions:
Put bread, tarama or caviar, lemon juice and scallions into food processor, blend briefly. With motor running, gradually pour in the oil, blending until emulsified and thick. Add salt and pepper to taste. Serve sprinkled with chopped parsley or cilantro. Note: you may not wish to add full amount of oil; check as you go.
