PECAN WAFFLES Recipe

  American Brunch

Ingredients:
1-3/4 cup cake flour
2 tsp baking powder
1/2 tsp salt
1 Tbsp sugar
3 egg yokes & 3 egg whites beaten stiff
4-6 Tbsp melted butter
1-1/2 cup milk
3/4 cup toasted pecans, coarsely chopped

Directions:
Sift together the flour, baking powder, salt & sugar. Add the egg yokes, butter & milk. Combine in a few strokes then fold in the egg whites & pecans. Cook in a waffle iron in batches keeping cooked waffles warm until ready to serve.
SERVES 6
Serve with fresh fruit on top at breakfast or whipped cream for dessert or brunch.
