Plum and/or Berry Soup Recipe

  Soup

Ingredients:
plums and/or berries
red wine (Burgundy type)
sugar to taste
lemon juice (optional, to taste)
water (if needed) or juice
cornstarch as needed
unsweetened whipped cream or creme fraiche

Directions:
This is seat of the pants of course, but a very forgiving technique. Cannot find specific recipe but basically the fruit is cooked (if raspberries are used, cook and strain) in the wine and then pureed. Adjust flavor with sugar and/or lemon juice if needed. Simmer with cinnamon stick and, if you like, add other spices. Thicken only slightly with cornstarch/water. Chill. Serve topped with cream.
