Whole Garden Soup Recipe

  Soup

Ingredients:
2 Tbs. olive oil
1 small onion, chopped
1 leek, sliced
1 cup string beans, cut
1 cup cabbage, sliced
1 cup carrots, sliced
1 cup broccoli, cut
2 tomato, cut up
3 cans low sodium chicken broth
1/2 cup cooked brown rice
1 cup white beans
1/4 cup basil leaves

Directions:
Place the oil and onion in a soup pot. Cook for one minute then add the leek, beans, cabbage, carrots and broccoli. Cook until vegetables are tender. Add the tomato along with the chicken broth, rice, beans and basil. Cook for 15 minutes until all the flavors are combined.
This is a northern Italian soup which is thick with lots of vegetables and beans.
