Mango, Lime and Mint Salsa Recipe

  Australian Dressing

Ingredients:
2 ripe mangos -- peeled and chopped
3 spring onions -- finely chopped (*)
1/2 cup chopped mint
11/2 tablespoons lime juice
Freshly ground black pepper

Directions:
Combine all ingredients.
Process until smooth.
Set aside for a minimum of 15 minutes before serving at room temperature.
Keeps well, covered and refrigerated up to a day.
Makes up to 11/2 cups.

(*) Green onions


Note~~ Use canned mangos if rupe ones are not in season. The results will be satisfactory, although not as tasty as when fresh mangos aew used.
