Bruchetta Recipe

  Italian Appetizer

Ingredients:
6 slices Good quality Italian Bread, 3/4-inches thick
1 1/2 cups finely chopped fresh tomato
2 tsps. grated Parmesan cheese
2 tsps. olive oil
1 tsp. dried basil or 4 tsps. fresh basil
2 small cloves garlic, minced

Directions:
In a small bowl, mix chopped tomato, Parmesan cheese, oil, basil and garlic. Broil or toast bread on both sides until golden brown. Spoon 1/4 cup tomato mixture onto each slice of toast. Return to broiler briefly to heat through.
Makes 6 appetizers
