Mushroom -Matzah Farfel Kugel Recipe

1/2 pound fresh mushrooms, sliced
1 stalk celery, chopped
1 medium onion, chopped
4 cups matzah farfel
1 1/2 tsp. salt
2 egg whites

Preheat oven to 350*F.
Saute celery and onion in abit of water 7 to 10 minutes, until soft.
Add mushrooms and saute until done.
Cover farfel in warm water and soak for a few minutes until softened. Drain well.
Whisk egg whites until slightly frothy. Combine with veggies and farfel. Bake in a sprayed 8-inch pan, covered, 30 minutes.
Serves 8
