Tamarillo Sauce Recipe

Ingredients:
2 Tamarillos (10 oz.)
1 tsp. Kosher salt
2 Tbls.very finely chopped white onion
1 tsp. canola oil
2 medium jalapeno peppers,seeded, deribbed, and finely chopped (optional)
Cooks without Tamarillos can use Tomato Plum Sauce

Tomato plum sauce:
3 vine-ripened plum tomatoes, peeled
1 medium red plum, peeled
2 Tbls. fresh lemon juice
1 tsp. Kosher salt
2 Tbls. very finely chopped onion
2 Tbls. chopped cilantro
1 tsp. canola oil
2 jalapeno peppers, seeded, deribbed and finely chopped,optional

Directions:
Tamarillo Sauce:
Bring a small saucepan of water to a boil. Add the tamarillos and boil until the skins burst, 5 to 7 minutes. Remove with a slotted spoon, cool, and peel. Pass through the medium disc of a food mill.
In a food processor, puree the tamarillos anf 1/4 cup water. Add the remaining ingredients and process until well blended.

Tomato Plum Sauce:
In a Food processor, puree the tomatoes and plum with 1/4 cup water. Pass through a coarse sieve into a medium bowl.
Stir in the remaining ingredients.
Makes 1 1/2 cups tamarillo sauce Makes 1 1/2 cups Tomato Plum sauce
The sauce will keep tightly covered in the refrigerator or freezer for 2 weeks Tomato Plum sauce keeps for 2 weeks in the refrigerator for 2 weeks. Tamarillos not always available. Tomato Plum sauce makes a good substitute. Tomto Plum sauce
