Leek & Potato Soup W/Onions & Pork Recipe

  Soup

Ingredients:
3 TBL sweet butter
5 leeks, only white part, chopped
1 1/2 quarts water
6 potatos, peeled & diced
salt
pepper (freshly ground)
1/2 cup lean pork, sliced
2 onions, peeled & sliced
8 croutons, fried in peanut oil and butter

Directions:
Cook leeks in butter for a few minutes over low heat. When they are soft, add the water and potatoes, salt and pepper, and cook slowly. After 30 minutes, saute salt pork and onions and add to soup. Serve with croutons.
