Romaine Salad with Oranges Recipe | |

Ingredients:
2 Tablespoons olive oil6 Tablespoons peanut oil 1/4 cup tarragon vinegar 1 1/4 teaspoons grated orange rind 1 1/2 teaspoons sugar 1/2 teaspoon dried tarragon 1/4 teaspoon garlic salt 1/8 teaspoon pepper dash Tabasco 2 medium heads Romaine lettuce (about 6 cups torn) 1 large red onion, sliced thinly 1 can (11 ounces) mandarin oranges, drained 1 avocado, sliced 1/2 cup slivered almonds
Directions:
In a small bowl whisk together oils, vinegar, orange rind, sugar, tarragon, garlic salt, pepper and enough Tabasco to give the dressing a clean edge. Cover and chill for 30 minutes or more, to let the flavor develop. Mix Romaine, onion, mandarin oranges and avocado in a large salad bowl. Just before serving, give the dressing a good stir and toss it well with the salad. Sprinkle with almonds. Servings: 6
