Crispy Lemon Chicken Recipe

  Chicken

Ingredients:
4 Chicken breast halves, skinless, boneless
1/3 cup Reduced fat mayonnaise
1/4 cup Parmesan cheese, grated
1/2 tsp. Dried oregano
Grated peel and juice from 1/2 Sunkist lemon
2 Tbs. Dry bread crumbs

Directions:
Preheat oven to 400 degrees F. Blot chicken pieces with paper towels to dry surface. In a small bowl, stir together the mayonnaise, cheese, lemon peel and juice. Roll each chicken piece in the mixture to coat lightly and completely. Sprinkle with breadcrumbs. Place in baking pan; bake 20 to 30 minutes, or until done.

Makes 4 servings.
