POTATO KUGEL (LOAF) Recipe

Ingredients:
6 Idaho potatoes
1 large onion
3 carrots
2 eggs, beaten
1/2 c matzoh meal OR 1/2 c bread crumbs
1/4 c vegetable oil
1/2 tsp salt
1/4 tsp pepper

Directions:
Grease an 8" or 9" loaf pan. Peel the potatoes, onion & carrots. Grate or shread the potatoes, onion & carrots (We use a food processor). Place in a colander or strainer & squeeze out any excess liquid. Place in a large bowl, add the eggs, salt & pepper & combine well. Add the matzoh meal or bread crumbs & mix only until the matzoh meal or bread crumbs are fully absorbed.
Add the oil & blend well.
Bake at 350* F for 40 minutes or until the top is golden brown. Let cool in pan about 15 minutes before turning out onto a platter. Slice as you would a meat loaf.
YIELD: 4 to 6 servings
