Eggplant And Tomatoes Over Rice Noodles Recipe

Ingredients:
1 Eggplant (cubed to 1/4 to 1/2 inch cubes)
1 cn Tomatoes (either use whole and chop, of buy chopped)
1/2 pk Rice noodles (glass noodles) precooked
Salt (optional)

Directions:
In microwave container, layer eggplant, salt, tomatoes, and rice noodles in that order. Microwave high until eggplant is to taste. Mix everything.

Variation: Use sticky rice instead of the noodles.
