Creamy Cucumber Salad Recipe | |

Ingredients:
2 cucumbers, peeled and cubed 2 cups sour cream 4 sprigs fresh mint, chopped 3 cloves minced garlic 1/4 cup lemon juice 1/4 cup olive oil 1/4 teaspoon salt 1/8 teaspoon ground black pepper
Directions:
Place cucumbers in a large salad bowl and set aside. In a small bowl, whisk together the sour cream (or yogurt), mint, garlic, lemon juice, olive oil, salt and pepper until well blended. Pour over the cucumbers, mix until well coated.Makes 4 to 6 generous servings
