Pork Ribs and Sauerkraut Recipe

  Pork

Ingredients:
4 lbs. country-style pork ribs
3 to 4 lbs. sauerkraut (bagged or bottled - NOT canned)
4 tart apples, cored & cut into small dice
4 medium potatoes, scrubbed or peeled and cut into large chunks (quarters or eighths)
1 to 2 teaspoons caraway seeds
1 to 1 1/2 teaspoons ground black pepper

Directions:
1. Preheat oven to 350 degrees F.
2. Add ribs to a large pot (oven-proof) or deep roasting pan along with 1 to 2 inches of water.
3. Add the rest of the ingredients and mix all together.
4. Cover & bake for two hours.
5. Bake for one more hour, uncovered for part of the time so that some of the liquid evaporates.
4 servings
Note: Do not be tempted to use boneless pork - the meat will be tough.
