Crumpets Recipe

  British Potpourri

Ingredients:
3 cups flour (white or half white and whole wheat)
1 Tbsp. baking powder
1/2 tsp. salt
2 Tbsp. sugar or honey
2 Tbsp. butter or margarine
1 egg
1-1/2 to 1-3/4 cups milk

Directions:
Mix flour, baking powder, salt, and sugar. Cut in shortening till mixture is like breads crumbs. Beat egg with 1-1/2 cups milk. Combine wet and dry ingredients and stir just enough to moisten. (The batter should be thick, but if it doesn't spread when dropped on griddle, add some more milk.) Drop batter by tablespoons onto hot, greased griddle. Bake as usual for pancakes.
