Ingredients:
2 ripe med. avocados1 TBS lemon juice 1 tsp minced scallion 2 TBS mayonnaise 1/2 tsp crush dried red hot chili peppers 1/4 tsp salt
Directions:
halve avocados lengthwiseand remove pits; scoop flesh out into a small bowl, sprinkle with lemon juice,and mash with a fork. Mix in remaining ingredients, place a piece of plastic food wrap directly on surface, and chill 1-2 hours. Stir well and serve with crisp corn chips or other crackers that are crisp. Makes about 1 pint.about 30 calories per TBS.
I add about 1/2 tsp garlic powder in mine and sometimes a drop or two of tabasco....it's really good!
