Crispy Coconut Shrimp Recipe | |

Ingredients:
1/2 Cup Flour 1 Tablespoon sugar 1 Teaspoon ground red pepper 1/2 Teaspoon salt 2 Eggs 2 Tablespoons water 2 1/2 Cups sweetened flaked coconut 1 Pound LARGE Shrimp - tails left on 2 Cups veg. oil
Directions:
Combine flour, sugar, red pepper, salt. Beat together eggs and water. Place coconut in shallow dish. Coat shrimp w/flour - dip in egg - roll in coconut pressing firmly to coat both sides of shrimp. Heat the oil - cook shrimp in batches til golden brown. Drain on a paper towel. A good dipping is made with plain yogurt and pina colada mixer! |
