Chicken Parmegiana Recipe

  Italian Chicken

Ingredients:
1 lb. chicken breasts (4 oz. pieces)
1 cup seasoned bread crumbs
1 cup grated parmesan cheese
2 Tbsp. chopped parsley
3 eggs
3 Tbsp. extra-virgin olive oil
Marinara sauce
mozzarella

Directions:
Combine bread crumbs, cheese and parsely. Remove skin and bones from chicken. Using any flat, heavy object, pound meat flat (fairly thin). Coat meat with breadcrumb mixture then dip into whipped eggs & directly into medium-hot frying pan. When done, remove excess oil from meat w/ paper towels. Place pieces in a baking pan & spoon a generous amount of marinara sauce onto individual pieces (not enough to flow off meat) & top each one with mozarella. Bake in 325 degree oven about 15-20 minutes, or until cheese is completely melted.
