PORTUGESE RICE Recipe | |
Portuguese Rice | |
Ingredients:
1 green pepper, diced 2-3 large tomatoes, skined and diced 1 medium onion thinly sliced 1 cup long grain rice 1 1/2 cups water (might need more) salt and pepper olive oil
Directions:
Saute onion in oil, add pepper and cook for 5 minutes. Add tomatoes and cooks 10 more minutes. Add rice and stir to cover with vegetables. Add water, salt and pepper. Simmer till water is absorbed. Let rest for 5-10 minutes before serving. |
