Scallop & Shrimp On Skewers Recipe

Ingredients:
1/2 lb scallops
1/2 lb large raw shrimp,peeled and
deveined
3 tb olive oil
3 tb lemon juice
2 lg cloves garlic,minced
3 tb minced parsley
1/4 ts dried basil,crushed
1/8 ts black pepper
1/2 lb mushrooms

Directions:


Pat scallops and shrimp dry. Combine olive oil,lemon juice, garlic,parsley,basil and black pepper to make a marinade. Add shellfish and marinate 30 minutes to 1 hour,stirring occasionally. Alternate scallops, shrimp and mushrooms on skewers without crowding. Brush with marinade.Broil or grill 4" from heat source for 4 minutes. Turn skewers,brush with marinade and continue to cook about 3 minutes more or until scallops and shrimp are opaque. Do not overcook.
Yield: 4 servings
