Choke Cherry Jelly Recipe

  American Jellies and Jams

Ingredients:
3 quarts cherries
1 quart green apples
Water

Directions:
When chokeberries are bright red (not ripe) gather about 3 qts. Pick over and wash. Add a quart of green apples, washed and cut up, skins and all. Boil in a little water until soft. Strain and cool. Boil the liquid derived untilit is reduced to a thick syrup; remove from heat and measure sugar cup for cup with juice. Return to fire and boil hard until the jelly drop on the side of a spoon clings, refusing to drop. Pour into glasses hot glasses quickly.
Should make 6 glasses
