Pickled beets Recipe

Ingredients:
l/2 cup cider vinegar
l onion, sliced
l/4 cup sugar
l/4 teas salt
l/4 teas peppercorns
l bay leaf, crumbled
2 cups (one pound can) sliced beets

Directions:
Combine all ingredients, except beets, with l/2 cup liquid drained from beets. Add beets and bring to boil. Let cool.
For a sweeter pickle, add more sugar.
Can be served hot or cold.
This is an easy recipe using can beets instead of fresh.
