Baked Grouper Fillets Recipe

Ingredients:
4 6 ounce grouper or red snapper fillets
2 cloves garlic, minced
1 green bell pepper, cored, seeded and chopped
1 1 inch piece fresh ginger, minced
1 tsp. scallions, minced
1 Tbs. plus 1 tsp. olive oil

Directions:
Season grouper fillets with salt and pepper to taste and set aside. Combine remaining ingredients in a food processor or blender and blend until smooth. Coat grouper fillets with green pepper paste. Refrigerate 40 minutes. Preheat oven to 375F. Bake 10-12 minutes, or until fish flakes easily.
