Mashed Potato Doughnuts Recipe | |

Ingredients:
2 cups sugar 2 tablespoons butter 2 beaten eggs 1 cup milk 3 teaspoons baking powder Leftover mashed potatoes (about 2 cups) Flour
Directions:
Cream potatoes together with butter and sugar. Add 2 beaten eggs. Add sifted flour as needed to roll with 3 tsp. baking powder. Roll, cut in doughnut shape and fry in hot oil until golden brown and crisp on the outside. Sprinkle with powdered sugar or cinnamon and sugar. (Use dough promptly to avoid browning). |
