Amaranth Fruitcake Recipe

  American Cakes

Ingredients:
1/2 cup dates, chooped
1/4 cup figs
1/2 cup amaranth
1 cup boiling water
2 egg whites
1/4 cup margarine
1/4 cup pineapple tidbits
2 cups whole wheat flour
2 teaspoons baking powder
1/2 cup walnuts, chopped
1/2 cup pecans, chopped
1 teaspoon vanilla extract

Directions:
Soak dates, figs and amaranth in boiling water. Beat eggs well, add honey and margaring. Beat well. Stir in all remaining ingredients and mix well. pour into an oiled loaf pan. Bake at 350 degrees F. for 1 hour and 15 minutes.
