Crunchy Parsnip Gratin Recipe

Ingredients:
1 1/4 lbs peeled parsnips
knob of butter
salt and black pepper
2 tablespoons creme fraiche or sour cream
2 oz chopped walnuts
1 oz fresh breadcrumbs - wholemeal or granary

Directions:
Cut the parsnips into small chunks and boil for about 10 minutes until tender. Drain and mash well with seasoning and the butter.

Now beat in the creme fraiche until well mixed and put into an ovenproof dish.

Scatter the mixed breadcrumbs and walnuts on top and grill until browned and crispy.

Alternatively, place the dish in a hot oven - about 190:C and bake for about 20 minutes.
