braciole Recipe

  Italian Beef

Ingredients:
6-8 servings
2 pounds beefsteak or top round sliced and pounded 1/4 inch thick and cut into 6-8 inch pieces
2 tbsps.minced sweet pepper
2 tbsps freshly grated romano cheese or
3 tbsps parmesan cheese
3 tbsps minced flat parsley italian
2 cloves garlic minced or crushed
1tsp dried basil
3/4 tsp salt
1tsp freshly ground blk pepper
1/4 cup finely minced ham ,
salami or cooked sausage
1/4 cup love oil
3 cups tomato sause canned or homemade

Directions:
spread meat flat Mix remaining ingredients except oil and tomato sause. put a bit of stuffing in the center of each piece of meat. Roll up and tie tighly with cotton

string at both ends and in the center.l heat oil in a large skillet. Pat rolled meat dry on absorbent paper. saute in oil until well browned on all sides. add tomato sause cover and simmer slowly for 2 hours. or until meat is tender clip string and discard serve braciole in tomato sause over pasta polenta or rice.
