Curried Squash Soup Recipe

  Soup

Ingredients:
Banana squash cut into 1inch cubes--1/2 cup
Canola oil----2 tsp
half & half milk----2 tbsp( as desired)
red potato medium-----1
canola oil------1 tbsp
mustard paste---------1/4 tsp
cilantro fresh chopped fine---- 1 tsp
authentic curry powder--------- 1/4 tsp
salt to taste

Directions:
Wash the squash with skin on.
Cut into cubes.
Place a big pot on medium high heat and put in 2 tsp oil.
Add the squash and stir fry for 3-4 minutes to remove raw flavor. Sprinkle a dash of salt on it while frying.
Transfer all into a blender. let cool for a few minutes.
Wash potatoes well and cut into cubes with skin on.
In the same pot add rest of oil. Into it add potatoes and stir fry for about 5-6 minutes.
While the potatoes are frying-----
add milk to the SQUASH and blend into a paste.Set aside until use.
When potatoes are done frying add all other ingredients to it and stir fry for a few seconds.
Transfer the squash puree over the potatoes. Add some water to the blender to wash and add to the pot. Add water to make soup consistency as desired.
Simmer for about 3 minutes.
To make it non-veg.during frying the potatoes add asmall can of tuna in water. Drain water before add tuna. Break it while stirring


This makes a two or three serving depending on other items served.
This is a good food with high amounts of beta carotene. It is good for obese people as you can fill up. The curry powder helps draw out body water.
