Mashed plantain Recipe

Ingredients:
Green raw plantain-small (3)
prepared mustard----------1 tsp or more
salt to taste
Finely chopped white onions--1 tsp
Green pickled chili peppers chopped--1/2 tsp
Pure mustard oil-----1 tsp

Directions:
Wash the palntain and put in a pressure cooker with enough water. Boil the plantain. It takes the same time as potatoes to boil. After the plantains are boiled soft drain all hot water and fill with cold water.
Let the plantains stand in the cold water for five or more minutes.
Peel the plantains by pulling down the skin with fingers. Discard peel.
Place the white boiled plantain in a bowl. Add all other ingredients and mash to a smooth consistency.
Eat as would instead of mashed potatoes.
2 servings. To keep the food value all ingredients must be used as stated.
pure mustard oil could be replaced with pure butter. Pickled peppers could be added more than stated here or not be added at all. This could be given to children but peppers and onions have to be eliminated. Instead of mustard oil Butter should be added.
