Spinach Souffle Easy Recipe

Ingredients:
1/2 C Hellman's Mayonnaise,
1/2 flour
2 Tbs grated onion,
3/4 tsp salt,
1/4 tsp ground pepper,
1/4 tsp ground nutmeg,
1 C milk,
(1) 10 oz. pkg. of frozen chopped spinach thawed and well drained on paper towels,
4 eggs separated,
1/4 tsp cream of tartar.

Directions:
Preheat oven to 400 . Great 2 qt. casserole dish. In 3 qt. saucepan, combine mayo, flour, onion, salt, nutmeg & pepper. Stirring constantly cook over med heat for 1 min. Graduatlly stir in milk until smooth. Stirring constantly, cook until thickened. remove from heat. Stir in spinach. Beat in egg yolks. In small bowl with mixer at high speed, beat egg whites with cream of tartar until stiff peaks form. Gently folkd into spinach mixture. Spoon into prepared dishes. Place on lowest rack of oven. Immediately reduce oven temp to 375 . Bake 40 min or until top is puffed and golden brown. Service immediately.
