Crema Mexicana Recipe

  Mexican Sauces

Ingredients:
1 cup of crema Mexicana (found in the Mexican deli/refrigerated section in market; use heavy cream if you don't have creama Mexicana)

2 tblsps of butter

3 tblsps of flour

1 small can of Ortega green chile (diced)

1 teaspoon of garlic powder

salt to taste

1 roma tomato's diced

Directions:
make roux; add green chile, garlic, tomato, and salt; let simmer for 10 min; strain through sieve and use sauce with crab enchilada's, or with your favorite enchilada suiza receipe.
small flour tortillas are good with this sauce also, most people use corn
