CHICKEN, SAUSAGE AND RUE GUMBO Recipe

  Soup

Ingredients:
2 C. YELLOW ONION
2 SHALLOTS W/TOPS
3 GARLIC TOES
1 CUT UP CHICKEN
1 CUT UP HILSHIRE FARMS SMOKED SAUSAGE (BROWNED TO REMOVE FAT)
SALT
PEPPER
RED PEPPER
1/4 C OIL
1/4 C FLOUR

Directions:
1/4 C. OIL AND 1/4 C. FLOUR IN DUTCH OVEN. STIR UNTIL MAHOGANY COLORED. ADD VEGGIES AND STIR UNTIL ONION IS CLEAR. ADD MEAT TO DUTCHOVEN AND BROWN FOR A FEW MINUTES. ADD SEASONING AND COVER WITH WATER. COOK UNTIL CHICKEN IS COOKED.

SERVE OVER WHITE RICE WITH ICED TEA, CORNBREAD W/BUTTER, AND SALAD. YEAH! CHER
