Mexican Stew | |
Ingredients:
3-4 lbs pork roast4 Tblsp red chili powder 4 cans white hominy salt and pepper 1/2 cup chopped onion 2 lemons oregano
Directions:
Cut pork roast into small pieces. Boil until done. Spoon off extra grease from top of water. Add about 4 Tbls chili powder. Add 3 cans of white hominy to pork Take the last can and blend in blender. Add to mixture. This helps to thicken the stew. Add salt and pepper for taste. Cook again 30 minutes. For favoring in each serving bowl, sprinkle with chopped onins, a pinch of oregano and juice of a lemon. |
