Genoise Recipe

  Italian Cakes

Ingredients:
6 eggs
7 oz sugar
4 1/2 oz cake flour, sifted
4 oz melted, cooled butter
1 t vanilla

Directions:
1. Over double boiler, warm eggs and sugar to about 110 degree stirring

2. Whip these in electric mixer til they begin to recede

3. Alternate fold in flour and butter mixed with vanilla

4. Fill a floured and lined 9"" can pan 2/3 full

5. Bake at 350 degree til tests done; about 18-20 minutes
