  Cheesecake

Ingredients:
1/3 cup lemon juice
1 8oz. package cream cheese
1 can of Eaglebrand
Pie filling

Crust:
1 stick melted butter
1 cup flour
chopped nuts

Directions:
Make the crust first.
Melt the butter, add the flour and stir until the dough sort of follows the spoon around the bowl. Add the nuts. Pat it in a pie plate, trying to keep it about the same thickness. Bake at 350 degrees for about 15 minutes.

Cheesecake:

Soften the cream cheese a bit...about 10 seconds in the microwave often does it. Add the Eaglebrand and the lemon juice. Beat with mixer for a few minutes. It gets well bleded and kind of light textured.
Put it in the cooled pie shell, and add pie filling of your choice. I usually put cherry or blueberry filling on top. I've made a filling like for a fresh strawberry pie, cooled it and put it on top.
Refrigerate
