CRAB BALLS Recipe

  Appetizer

Ingredients:
CRAB BALLS

6 oz. crabmeat
3 oz. white bread crumbs
1 egg yolk
salt and pepper
1 egg -- beaten
1 tsp. lemon juice
bread crumbs -- browned
deep fat for frying

Directions:
Finely chop crabmeat; mix with bread crumbs, salt and
pepper, egg yolk and lemon juice.
Beat until smooth.
Divide into 8 portions and shape each portion into a ball. Coat each ball twice with beaten egg and browned bread crumbs.
Fry in batches for 5 or 6 minutes or until golden brown. Drain on absorbent paper and serve hot or cold.
