Italian Chicken | |
Ingredients:
4 lb chicken cut into pieces seasoning: salt, pepper, olive oil 3 small onions sliced (about 1/8") 1 med bell pepper, coarsely chopped 1 to 2 small cans of mushrooms 1 1/2 tsp finely diced fresh garlic 1 to 2 med sized cans of cooked pealed tomatoes 2 small cans of tomato paste Chianti wine Oregano (to taste)
Directions:
Fry chicken to med brown, drain on paper towels, Saute next 4 ingredients until they are translucent, DO NOT OVER COOK. Add remaining ingredients and some salt and mix thourghly. Add cooked chicken and let it come to a boil, lower heat and cook slowly for about 1 hr. When the meat is tender addremaining ingredients and let cook for 10 to 20 min longer. None Available
Serve this with your favorite pasta. Its a favorite throughout Italy. I lived in the Tuscan region of Italy for a few years and I saw this dish in about every Ristorante that I ate at. If you get a chance, Let me know if you like it........
