EGG CASSEROLE Recipe

  Brunch

Ingredients:


10 eggs
1/2 c. flour
1 tsp. baking powder
2 (4 oz.) cans diced green
chiles
1 pt. small curd cottage
cheese
1 lb. shredded Jack cheese
1/2 c. margarine or butter
1/2 tsp. salt

Directions:
Beat eggs until light and lemon colored.
Add flour, baking powder, salt, cottage cheese, Jack cheese and melted margarine.
Blend until smooth. Stir in chiles.
Place in buttered 9 x 13-inch baking dish.
Bake at 350 degrees for 35 minutes until top is brown and center is firm.

(Mushrooms can be substituted for the chiles.)
