CREAM OF CAULIFLOWER SOUP Recipe

  Soup

Ingredients:
CREAM OF CAULIFLOWER SOUP

2 Tbsp. unsalted butter
1/2 small onion, thinly sliced
4 c. rich chicken stock
1 large cauliflower, coarsely
chopped
1 bay leaf
1 large potato, peeled and
coarsely chopped
1 c. half and half cream
2 Tbsp. grated carrot
salt and pepper
fresh parsley, chopped

Directions:
Melt butter in heavy large saucepan over medium heat.
Add onion; stir until translucent, about 5 minutes. Do not
brown the onion. Add stock, cauliflower, potato and bay leaf;
bring to boil. Reduce heat; cover and simmer until veggies are
soft, about 15 minutes. Discard bay leaf. Puree soup in
batches in blender until smooth; return to saucepan. Stir in
half and half and carrot; heat through. Season with salt and
pepper. Garnish with parsley. Serve. Serves 8.
