Ingredients:
5 lbs. hamburger or venison burger1 lbs. pork sausage, unseasoned 5 teaspoons tender-quick salt(curing salt) 2 1/2 teaspoons black pepper 1 teaspoon garlic powder 2 1/2 teaspoons mustard seeds 2 1/2 teaspoon hickory smoke salt
Directions:
Mix and refrigerate for 24 hours. Mix again, and let sit another 24 hours. Divide into 3 or 4 parts. Knead and roll each part into long log. Put on broiler pan to bake.Bake at 200 degrees for 2 hours. Lower temperature to 150 degrees for 4 1/2 hours. If you don't knead the log, it won't be as smooth and firm. This freezes great. We like this with cheese and crackers.
