Tomato Pudding Recipe

Ingredients:
2 15 oz cans tomatoes for cooking
1/3 stick butter or margerine
3 slices state white bread, torn into small pieces
1/2 cup sugar (or to taste)
few shakes black pepper

Directions:
Remove any cores from the tomatoes and coarsely chop. Add the 1/3 stick butter or marg and cook in medium saucepan on medium heat for approximately 15 minutes or until slightly cooked down. Add the sugar and pepper. (Some like it real sweet, so sweeten to your own taste.) Remove from heat and add bread, stirring well. Pour into buttered 2 qt casserole dish and dot top with butter. Bake in 350 degree oven for approx 1/2 hour or until thickened.
Excellent served with corn, lima beans, or field peas.
