Tarragon cream sauce Recipe

Ingredients:
4 cu. cream sauce(recipe to follow)
1/4 cup sherry
1 cup shredded cheese(Gruyere) or your choice
1 tsp,dry tarragon
1 tsp. celery salt

Cream sauce:
1 stick unsalted butter
3/4 cup flour 2 tsp. salt
1/4 tsp white pepper
4 cups milk
1/2 cup heavy cream

Directions:
Prepare a simple cream sauce: See above. Whisk to combine and stir in the 1/2 cup heavy cream. Combine the cream sauce with the 1/4 cu. sherry, the shredded cheese, 1 tsp.dry taragon and the 1 tsp. celery salt. Whisk together to combine.Serves well with crab cakes, fried scallops etc.
Have frozen this recipe . To reconstitute: Place sauce into the top of a double boiler, and bring slowly to a thaw, and warming ,whisking occasonally to bring sauce together.
