Ingredients:
1 cup butter (no substitutes)1 cup white sugar 1/2 t. vanilla 1/8 t. salt 1 cup whole unblanched almonds 12 oz. milk chocolate about 3 cups ground walnuts
Directions:
Spread almonds onto an ungreased baking sheet in about an 11x7-inch rectangle. In a heavy saucepan, combine butter, sugar, vanilla and salt. Cook over medium-high heat, stirring constantly until a candy thermometer registers 300 degrees (if you don't have a thermometer, cook and stir until the toffee is about the same color as unblanched almonds). Once it hits 300, immediately pour the toffee over the almonds, covering all. Allow to cool.After the toffee has cooled and hardened, break it into large pieces. Melt the milk chocolate over a double-boiler (or nuke it). Dip the large toffee pieces into the milk chocolate and then roll in the chopped walnuts to cover. After the chocolate has set, break the toffee into bite-sized pieces and enjoy! The toffe will burn VERY easily, so be sure to stir it non-stop. Also it gets VERY hot and will cause a NASTY burn (trust me on this one :-) so be sure to keep kids and pets out of the way and make sure your baking sheet is on a heat-proof surface. My family LOVES this stuff - I hope yours will too!
