Rasberry Chicken with Snow Peas Recipe

  Chicken

Ingredients:
2tbsp. sweet butter
2 chicken breasts skinned and boned
1/4 cup onion
2tbsp rasberry vinegar
1/4 cup chicken stock
1/4 cup 35% cream
1tsp tomato paste

Directions:
Melt butter, sauteed chicken for 3 min. Remove chicken.Add onions cook 2 minutes. Raise heat, stir vinegar, reduce a bit. Whisk in stock, cream and tomato paste, simmer 1 minute.Return chicken to pan, simmer 5 minutes while basting. Remove chicken to platter and pour sauce over. Garnish with parsley for color.
